CreateDocument

https://api.acai.travel//document/v2/documents

CreateDocument creates a document record and returns a presigned upload URL.

The client PUTs the file directly to the returned upload_url; processing starts
automatically once the upload lands in S3. The document starts in PENDING_UPLOAD.
